Vegan bean/quinoa guacamole burger with yam fries

I had a crack at making vegan burgers today. I looked up the recipe, gathered the ingredients and took a shot at it. I’m happy the way they turned out, but after tasting the final product there are a few things I probably would change if I were to do it over again.

Ingredients:

  • 2 cups of pinto beans
  • 1/4 cup of quinoa
  • 1/2 cup of water
  • 1/8 cup of sliced onion
  • 2 avocados
  • 1/2 lime
  • 4 minced garlic cloves
  • 1/2 teaspoon of salt
  • 1/16 cup of olive oil
  • 4 pairs of burger buns
  • 4 leafs of lettuce
  • 4 medium sized yams
  • Cajun seasoning
  • Garlic powder

Instructions (fries):

  1. Preheat the oven to 400°F
  2. Peel and cut the yams into small rectangular chunks
  3. Cover a cooking tray with aluminum foil
  4. Spread olive oil over the foil
  5. Place the sliced sweet potatoes onto the tray
  6. Brush the yams with olive oil
  7. Place cajun season and garlic powder to taste
  8. Insert the tray into the oven for 20 minutes
  9. Remove the tray, flip the yams, add seasoning, and bake for another 20 minutes

Instructions (burgers):

  1. Pour the beans into a pot and let them soak for 4 hours
  2. Cook beans in a fresh bowl of water for 1.5 hours in medium heat
  3. Mix 1/2 cup of water with quinoa and cook over low heat for 12-20 mins
  4. Chop up the onions and garlic
  5. Make some guacamole (avocados, olive oil, salt, tomatoes, lime)
  6. Place onions, garlic, and quinoa into the bowl with beans
  7. Mash everything in the bowl together
  8. Warm up the bread patties on a flat pan
  9. Mold the beans mixture into a patty and lightly fry on a pan with some olive oil
  10. Place the patty onto some bread, add lettuce, tomato, guacamole, and salt


What I would change:

The fries were amazing, but the burger ended up a bit dry. To solve this I should have added some jalapenos and possibly some corn. Also, the burger bun wasn’t the best. This was my first time looking for vegan bread and it was not so easy to find.
